Anaesthesia
Probably the greatest invention of the second millenium AD, anaesthesia allows surgical correction of all manner of defects and diseases without pain or distress as well as relieving suffering in childbirth and trauma. I didn't really choose it as a career for that reason; I did a wide variety of resident jobs in medicine and just enjoyed it the most. The up-side is that the hours aren't too bad, you get to sit down a lot of the time and meet plenty of people. On the other hand you take a lot of responsibility for the safety and comfort of your patients.
